I want to publish a recipe book on casseroles that I’ve created.

Depends on how good the recipes are. I dont know how appealing a casserole cookbook would be. I’m a chef and love cookbooks. I dont think I would purchase a casserole cookbook though. I look for interesting, new recipes that Ive never heard of or find in restaurants. Stuff like foreign dishes. Casseroles just dont cut it for me. But good luck. Let me know the name and I’ll keep a look out for it. If its appealing I may even buy it!

I want an Italian food recipe book, and a dessert recipe book.
I want them around $ 10. Definitely under $ 20.
I don’t really have a preference on what kind of Italian foods, I guess more pasta though.
For the desserts, I want something that gives delicious recipes, but easy ones.
Any recommendations?

My recipe book was lost and it was from th 50′s. There was this wonderful rice pudding recipe that took eggs and was baked in the oven. Help please.

Rice Pudding Gonzo (named for one of the firefighters during 911). This was served by the restaurant near the twin towers that managed to stay open and feed the rescue workers.
2 quarts whole milk
1 cup long-grain white rice (do not rinse)
1 cup sugar – 1/2 cup brown sugar
2 tablespoons unsalted butter
1 teaspoon vanilla
1/4 teaspoon salt
2 large eggs
1 cup heavy cream
1/2 teaspoon cinnamon
preparation
Bring milk, rice, sugar, butter, vanilla, and salt to a boil in a 4-quart heavy saucepan over moderately high heat, then reduce heat and simmer, uncovered, stirring frequently, until rice is very tender, about 1 hour.
Just before rice mixture finishes cooking, whisk eggs lightly in a bowl. Remove pan from heat and slowly add 1 cup of rice mixture to eggs, whisking constantly. Stir egg mixture into remaining rice mixture in pan, then stir in cream.
Pour pudding into a 13- by 9-inch glass or ceramic baking dish (3-quart capacity) and sprinkle with cinnamon. Chill pudding, covered, at least 3 hours.

• Pudding can be chilled, covered, up to 3 days.

Bechamel sauce ( besciamella ) simple recipe
Another staple, this simple French sauce is a component of many recipes you’ll encounter in the kitchen. From GialloZafferano; Italy’s most famous food website. The béchamel sauce, or “la sauce à la Bèchameil”, the queen of white sauces, has a French origin but it’s very used also in Italy, where it’s called “besciamella”, and in England, where it’s known as “white sauce”. The inventor of the béchamel sauce was the Marquis of Nointel, Louis de Bechamel, who was the first to suggest it in his recipes in the 17th century. But it was Francois Pierre de la Varenne, chef of king Louis XIV, who called it “béchamel”, in honour of its inventor, when he included it in his recipe book “Le Cusinier Francois”. Nowadays, authoritative chefs agree on a probable Italian origin of the béchamel sauce: it could derive from the Tuscan “salsa colla” (literally, “glue sauce”), which may have been exported to France by Caterina de’ Medici. To prepare the béchamel sauce, melt the butter into a small saucepan (1), add the sifted flour (2) and cook everything for a few minutes, stirring constantly and preventing it from browning or sticking. What you’ve just obtained is called roux by the French (3); now remove the small saucepan from the heat and add the hot milk to the roux (4), stirring everything with a wooden spoon (5).
